Black-eyed Peas & Sushi Rice
The big takeaway from this dish is that good beans do not come from a can. You've got to soak them. There's a big difference.
Required
- Sticky/sushi rice
- 3 cups of black-eyed peas with some of the water it cooked in
- A head of bok choy (or some type of chard), chopped
- 5 cloves of Garlic, sliced
- 1 jalapeno pepper, chopped
- 1/2 red pepper, chopped
- A few tbsp of ex vg olive oil
- Paprika
- 1 tbsp cumin
- 1 bay leaf
- Salt & Pepper
Instruction
- Start cooking the rice
- Heat frying pan over medium high heat
- Add olive oil and garlic and brown
- Add garlic and sauté for a few minutes
- Add everything else and lower heat to a simmer for at least 45 minutes
- Add salt and pepper to taste
- Serve over rice
